The program is composed of three courses in food studies including two core courses and a choice of one of the following courses: Business of Wine or Anthropology of Food. These activities will allow you to directly observe the concepts studied in the classroom and analyze issues surrounding Italian and global food culture from varied approaches and perspectives.
You will learn that far from being stable, Italian culinary “traditions” have been in a state of constant flux, the result of an ever-changing combination of political, economic, and social variables. You will be able to discover local markets and producers in Perugia, and these direct experiences will reinforce the topics studied in class. You will lead a workshop in a local high-school to raise awareness on the problem of food waste. It will examine the role food plays in shaping group and personal identities with a particular focus on Italy and the U.S. You may choose from any of the Umbra Institute’s offerings in areas such as history, literature, studio art, art history, creative writing, international marketing, politics, and psychology. This experience will help you gain invaluable insight into many aspects of the wine industry, including wine making and wine tasting culture, the global wine trade, and the techniques wineries use to reach their diverse international customers.
The FSSP had developed a number of  strategic partnerships with universities and food-related organizations in the US and Italy. Eataly has stores in both New York City and Chicago, and is looking for both interns and new employees as it will soon be opening a second Manhattan store. Bordering countries of France, Switzerland, Austria, and Slovenia to the north have influenced Italian culture, as have the Mediterranean islands of Sardinia and Sicily and Sardinia. We will start our days with conversational Italian lessons taught by Jodina, then head out to experience and photograph Tuscany with award-winning photographer Joanna Herr, and tour some of Italy's best preserved medieval towns. While the program could also be for those of you interested casually in food, it is particularly well suited to those hoping to enter a career in food. Through ethnographic research, you will explore how local food “traditions” change over time and space, and how culinary knowledge is used by people in different ways. The Roccafiore environment also offers the opportunity to observe how Umbrian culture, wine tradition, and organic approach merge to form a unique and successful business venture. It is not necessary to apply for another study visa as you will have 90 days as a tourist after the student visa expires.
Other languages spoken by native Italians include Albanian, Bavarian, Catalan, Cimbrian, Corsican, Croatian, French, German, Greek, Slovenian and Walser.
In the North of Italy, fish, potatoes, rice, sausages, pork and different types of cheeses are the most common ingredients. Those of you who complete all three FSSP courses will receive a certificate from the Umbra Institute documenting your participation, and many of our alumni have jobs that relate to food. These graded workshops incorporate a knowledge of production, quality evaluation, and biochemical information. The course will focus on food as material and immaterial heritage through an analysis of food museums and eco-museums, as well as exploring the role of food in Italian to understand the changing attitudes and roles of men and women towards food and cooking. This growing interest has strengthened the role of traditional key players of the wine trade such as importers, distributors, wholesalers, and retailers, while helping to create new professional figures such as wine writers, wine club managers, and event promoters.
Housing: You will be housed with international or Italian students in a shared apartment in the Perugia city center.
Pasta dishes with tomatoes are popular, as are many kinds of stuffed pasta, polenta and risotto.
We also have a new collaboration with the Master of Arts in Food Studies at the University of the Pacific (see below). In the South, dishes are dominated by tomatoes, either served fresh or cooked into sauce, and also includes capers, peppers, olives and olive oil, garlic, artichokes, eggplant and ricotta cheese.
The course includes business simulations, and you will produce a start-up or marketing project.
